I was able to review King Arthur White Whole Wheat Flour and Premium 100% Whole Wheat Flour. Here’s what I think – Love them! Their flours are never bleached and never bromated. Here are some interesting facts about the company: they were founded in 1790. To put it into context, George Washington had just been elected to his first term in office and they are 100% employee-owned. How neat is that? They are located up in Vermont.
By the way, if you want to know specifically where your flour is coming from they have videos on their site of the farmers who grow their wheat! How many people can say they’ve seen the farmers who actually grow the wheat they buy. If you want to meet the farmers click here. All of the farms are located in the US.
They hold classes in Vermont and do travel if you’re wanting to learn new things about cooking. You can check out their schedule here.
They have all kinds of flour from All-purpose to gluten free. I found their wheat flours to be light and airy. I could really tell the difference in the Zucchini bread I made with the White Whole Wheat flour I used texture and taste wise. They have a baking blog that gives instructions and about 200 recipes so if you’re looking for ideas check them out.
Here’s the recipe:
3 cups white whole wheat flour
1 tsp salt
1 tsp baking soda
3 tsp ground cinnamon
1/4 tsp baking powder
2 cups white sugar
3 tsp vanilla extract
1 cup vegetable oil
3 cups grated zucchini
1. Preheat oven to 350 degrees. 2. Sift together flour, salt, soda, cinnamon, baking powder. 3. Beat eggs. Add and mix well sugar, vanilla, and oil. Add zucchini to egg mixture. Add dry ingredients, mixing well. 4. Bake 2 large pans for 1 hour. ** I doubled this recipe to make enough for 4 small loaf pans for the kiddos and 1 large pan. The small pans only take about 35-40 mins. Just check them with a toothpick.
