OK, Here’s my Monday meal planning! I hope you guys are having a good week so far! Got up and went to kickboxing this morning and burned it out!
Monday – leftover KFC. (comfort food – I know it’s bad for me)
Tuesday - Ham and chicken salad
Wednesday - jambalaya
Thursday – We call it Hunter’s stew. It’s basically spicy sausage like andouille, cabbage, diced tomatoes, diced potatoes, 1/4 cup of this spicy seasoning called Chef Leo’s Camp Stew
Friday – Out
a bunch of jalapenos
Preheat the oven to 400. Slice the jalapenos in half and remove the seeds and white veins. Fill with cream cheese and wrap with 1/2 slice of bacon. I think the smaller the jalapenos the better. Make them bite size. If you are making them for a party and need to get the biggest bang for your buck leave the halves separate so that one jalapeno makes 2 servings. In the picture above I put the 2 halves back together since it was just the hubs and me eating them. Cook for 40 minutes. You need to plan for 50 minutes to an hour for this recipe.
Here’s a tip I use. I take 2 pieces of foil. I lay out one on my counter and slice the jalapenos on that. When I’m done I just roll the foil up and toss. I haven’t ruined my cutting boards with their hot juices or made a mess. I also line the cookie sheet with foil so that after they finish cooking I roll that foil up and throw it away. No mess.
