We were all out of town this weekend and we were still tired come Monday so I wanted an easy meal but since we’re trying to eat healthier I still wanted it to be nice. Enter Bertolli Meal Soup. I really like the Roasted Chicken and Rotini Pasta version. It has lots of yummy chicken, rotini pasta, squash, celery, zucchini, carrots and a wonderful sauce. Now, I’m VERY particular about my vegetables. I prefer raw but will eat lightly cooked veggies that still have a bit of a crunch and these are perfect. I have to admit the first time I ate the soup I chanted be an adult, eat your veggies, set a good example but once I actually taste them I no longer had to encourage myself. I really enjoyed every bite. The broth seeps into all the veggies and chicken and makes it all taste wonderful.

I love having soups, especially in the colder months, because it makes you feel warm and is so comforting. I meant to pick up a nice loaf of bread to eat with the soup but forgot so I decided to make biscuits. Now my challenge was to make dinner in under an hour and I can tell you they could have made the challenge under 30 minutes. For the biscuits I mixed 2 1/4 cups of bisquick and 2/3 cup of milk. Baked at 450 for 10 minutes. To make the dinner fun for the kids I cut their biscuits too look like pumpkins. Too keep the meal low cal I topped the biscuits with apple butter that only has 30 calories per serving.
For the Bertolli Meal soup I took the bag out of the freezer and put it into my favorite pot. I waited until it came to a boil and then covered and cooked for 5 minutes. Only 5 MINUTES! How easy is that?
Now I mentioned above that we are trying to eat healthier. Each serving (1/2 a bag) is only 290 calories! That is amazing! Even with the biscuits this was a meal that was super tasting and helped me watch my figure. Here’s a funny fact I didn’t mention above was that I didn’t tell the hubs that this was a soup out of a bag. He is quick to form opinions about frozen prepared meals so I just passed it off as my own and he kept complementing me and saying how tasty this was!
I love how quick and easy this meal was. We stayed full; which I was worried about with my husband. Since we’ve started eating healthier my husband often complains about an hour later of being hungry but not after this meal.
Right now (Feb 1st) Target has a $2 coupon of Bertolli’s Frozen meals. I searched grocery and it came up on the last page.
