Homemade Smoked Marinara + How to Make Your Own Smoker For Free!

OK, so I’m fairly cheap and don’t like spending money that I don’t have to.  :)  I found a great way to make my own smoker to go on the grill that didn’t cost me anything.

Marinara Recipe:

  • 1 1/2 lbs of tomatos
  • 1 onion
  • 2 gloves of garlic
  • olive oil
  • aluminum foil
  • hickory wood chips
  • 1 tbsp of tomato paste
  • 1/4 low sodium chicken broth
  • 1/2 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1 tbsp of minced fresh basil
  • 1 tsp of red wine vinegar

Soak wood chips in water for 30 minutes.

Preheat grill on one side leaving the other half off. You will put the smoker on the lit side and the tomatoes and onions on the unlit side. You want it to reach 400 degrees. Brush or spray grill with non stick spray.  Cover grill and until smoke appears, about 5 minutes.

I used heavy foil and shaped it into a box.  Once the chips had soaked. I drained them and put them into the foil box. I put it on a cookie sheet for easy transportation. By the way, by using foil I saved myself $10 which is what a small smoker is at Lowe’s Hardware.

I brushed the sliced tomatoes and onions with olive oil on both sides. Place on grill and smoke for 10-15 minutes. You don’t want them to be mushy just soft. Now we had an accident so mine went the full time and got alittle mushy.  So checking them every so often is a good thing.

Next puree the tomatoes, onions, broth, and garlic in food processor or blender until smooth. Next transfer to a saute pan and bring to a boil; simmer on low for about 5 minutes.

Take it off the heat and add the basil and vinegar.
