
Yummy is all I can say about this recipe. You can use bacon or sausage. This is also a fun recipe to do with the kiddos. My 3 year old helped me with alot of it. It’s perfect for those mornings when you have to run out the door if you have already premade them.
Ingredients:
- either 4 slices of bacon or turkey sausage
- 3 large eggs
- 3 TBSP of milk
- Salt and pepper
- I can of refrigerated biscuits
- 1/3 cup of reduced fat shredded cheddar cheese
Preheat the oven to 400.
Cook the bacon if you’re using that. Chop it and set aside.
In a bowl combine eggs, milk, and salt and pepper. Whisk together.
Roll out each biscuit. After making these I think I rolled them to big. I think next time I will make it so they only come to the top of the muffin pan and not over it. Make sure you press the biscuit into the bottom of the pan and up the sides. Put alittle cheese in the bottom of each biscuit and then top with the egg mixture. I then rolled over the top of each cup sort of like you would a pie.
Cook from 10-15 minutes. I used a tooth pick to determine if the egg was done in the middle.
