The hubs and I love the antipasta salad from our local pizza shop so we decided to try to make our own. We haven’t perfected it but we’re getting close. I need to find marinated vegtables or make my own.
Here’s how we built our salad:
We used 3 different types lettuces from our garden. Just use your favorite.
Salami
Turkey
Provolone Cheese
Pepporoni
handful of green olives
1/2 small jar of marinated artichokes
tomato
Bell peppers – we used orange and yellow for the color
cauliflower
We used Kraft Dressing Italian Vinaigrette made with EVOO
Fresh Mozerella
We rolled the meat and provolone together and then sliced. We rough chopped the rest and put it all in the bowl. Then we drizzled the salad dressing over it. Now I won’t say this is exactly healthy but if you’re looking to use veggies from your garden it makes a very satisfying and yummy meal.





































I pickle veggies in the pickle juice that comes in the jar. When I finish the pickles I add banana peppers rings, tiny baby carrots and cauliflower. I add 2 cloves of garlic.
